While in the air with the griffon, hold LT to dive with right joystick up, and then ascend with right joystick down. It actually makes griffon flying a lot easier for me. Other changes include X,A,B,Y and RB becoming Weapon Skills 1-5. But this is where I think my controller setup shines.
